Holy crazy cow!!!! I just made my mouth so happy eating this pizza! Yes, I know the dough isn’t perfectly round and it looks kinda warped, but who cares?? When you make homemade dough your pizza is allowed to be circle-y challenged, as long as it tastes phenomenal (which this pizza does)!
This was my first introduction to Manchego cheese……well…..maybe I ate it unknowingly at a party, while I was chowing on the cheese tray, but to my knowledge I’ve never had it before. Such a unique cheese with an amazing flavor! As Julie Hall said, “I’m surprised any cheese MADE it ON the pizza!”.
If you haven’t had it, I would describe it as a colby jack with flavor notes of parmesan. I’m not the best cheese describer in the world, so feel free to correct me if you have a better description!
I went ahead and made homemade pizza dough (click here for an amazing pizza dough recipe), but Julie uses store bought to save time, since she has two young boys at home!
Julie told me sometimes she makes mini pizza’s on pita bread, instead of pizza crust, to have an easy meal to heat up for future meals! I followed her lead, her recipe calls for 2 pizza’s, but since it was just me and Kieran eating, I only made one. I split the pizza sauce in half, used half for the pizza, and froze the other half.
The pizza dough recipe I made makes 2 pizza dough balls, so I used one and froze the other one! Now all I need to do is buy more Manchego cheese in a couple of weeks, unfreeze the sauce, and the dough, and I’ll be ready for super quick meal! Yay!!!
Ingredients
- 2 pizza crusts (Julie recommends Bobbli)
- 1 tsp oregano
- 1 tsp cumin
- 1/2 tsp paprika
- 1/4 tsp pepper
- 1 tsp olive oil
- 1 cup chopped onion (I used white onion)
- 5 garlic cloves, minced
- 3, 14.5oz cans diced tomatoes, drained
- 10 oz Manchego Cheese, shredded
Directions
- Preheat the oven to 450.
- Combine the oregano, cumin, paprika, and pepper, then set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and saute for 3 minutes. Then add the garlic and diced tomatoes, stir, then turn the heat up to high and bring to a boil. Once it starts to boil, reduce the heat to low and simmer for 15 minutes, or until the sauce is thick or your desired pizza sauce consistency.
- Top the crust with the tomato mixture. Sprinkle the oregano mixture on top, then sprinkle the manchego cheese on top.
- Bake the pizza’s for 12-15 minutes, or until the cheese is a golden brown.
- Eat the shit out of that pizza!
