I’m struggling with what I should write about this week. This is a food blog, so I’ll eventually get to the Mango Chili Fried Rice recipe (which is amazing).

Mango Chili Fried Rice Recipe

Ingredients
  

  • Sesame oil
  • 2 egg
  • 1 large (2 small) boneless, skinless chicken breasts, cut into cubes seasoned well with salt and pepper.
  • 2 mango, cut into chunks
  • 2-3 garlic cloves, diced
  • 1 tablespoon fresh ginger, minced
  • ½ red onion, diced
  • 1-2 jalapeno (with or without seed), slicedV
  • 1 red pepper, diced
  • 2-3 cup cooked white rice
  • 1 tablespoon oyster sauce (optional)
  • 2 tablespoons fish sauce
  • 3 tablespoons soy sauce
  • 3 tablespoons sweet chili sauce
  • Juice from 1 lime
  • Splash of OJ (optional)
  • 1 avocado, diced
  • Mint for garnish

Instructions
 

  • In a small bowl whisk together the oyster sauce, fish sauce, soy sauce, sweet chili sauce, lime juice, and OJ. Set aside.
  • Heat a splash of sesame oil in a large skillet over medium high heat.
  • Add the two eggs (I scramble them in the pan to avoid dirtying another dish) and cook them to your desired doneness. I like to add a pinch of salt and pepper. Once finished cooking slide the eggs onto a plate. Set aside.
  • If you pan is dry, add another small splash of sesame oil to the pan. Add the cubed chicken breasts. Sautee until the chicken is fully cooked approx 5 minutes. Remove chicken from the pan and onto the same plate as the eggs. Set aside.
  • After the chicken is cooked I gage the temperature of my pan before adding the garlic and fresh ginger. It it seems to hot, I'll turn the heat down so the garlic and ginger won't burn.
  • Add another small splash of sesame oil if need be. Add the garlic and ginger, cook until fragrant, approx 30 seconds, then quickly add the jalapeño, red pepper, and red onion. Sweat the vegetables until they become soft 5-7 minutes.
  • Once the veggies are soft, add the chicken back to the pan.
  • Stir in the rice and mix until everything is well combined.
  • Now add the soy sauce mixture and stir once again. Taste and adjust the flavor to your liking. Add additional soy sauce, sauce, lime juice, ect.
  • Finally add the mango and eggs, cook until reheated.
  • Serve in bowls and garnish with avocado and mint. Enjoy!
