Extremely Delicious Edamame Hummus Recipe

Extremely Delicious Edamame Hummus is a healthy, satisfying snack. It's perfect for dunking veggies, pouring over pasta, or smearing on sandwiches. It's great for parties or for an after school snack!

Ingredients
  

  • 1 15 oz can white beans drained and rinsed
  • 2 cups cooked edamame shelled, thawed if frozen
  • 2 garlic cloves roughly chopped
  • ½ tablespoon red chili flakes
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • Juice from 1 lemon use 2 lemons if desired
  • ¼ cup olive oil
  • ⅛ - ¼ teaspoon sesame oil
  • 2 tablespoons of fresh cilantro chopped
  • ½ cup water if needed

Instructions
 

  • Add the beans, edamame, garlic, chili flakes, salt, and pepper to a blender or food processor. Blend the ingredients until smooth. If the mixture is too thick, add some water to loosen it up.
  • When the mixture is just about where you like it, but still a little thick, slowly blend in the cilantro, olive oil, and sesame oil.
  • Taste and adjust seasonings. You can add additional salt, pepper, cilantro, lemon juice, olive oil, or sesame oil to your liking.
  • Serve in a large bowl and garnish with cilantro, edamame, and a drizzle of olive oil.

Notes

Be careful with the sesame oil because its taste can be overwhelming. Add small amounts at a time.
